Easy Three Ingredient Banana Muffins


I'm not a kitchen wizard...I can cook you dinner, but it's not going to be the fanciest meal you've ever had which is why I don't share too many recipes, but the fall is the time of year I always want something baking especially on a football Sunday! I don't know about you, but I buy bananas every single week (they're my fave fruit!)...and almost every single week, they go bad. Idk what it is, but bananas don't last the way they used to (woah, I sound 72 years old...don't point that out in the comments please, lololol). So I knew I wanted to make a banana bread thing of some sorts, but I decided to jazz it up with some of my favorite things to add to bananas. 

So without further ado, I give you, my EASY minimum of three (!) ingredient banana muffins!


3 Ingredient Banana Muffins


Yields 21-24 muffins
Oven: 350 degrees
bake time 14 minutes per muffin tin 
(I had to do this twice)

What you need:
3 very ripe bananas
2 eggs
1 box cake mix -I used yellow cause it's my fave! Chocolate would be amazing

Add ins:
1 cup of milk chocolate chips
light brown sugar to sprinkle on top each muffin prior to baking

Other ideas:
nuts
sprinkles
brown sugar-mix in batter rather than adding as a topping
oreo crumbles
graham cracker crumbles





Preheat oven to 350. Mash bananas, add in eggs and mix well. Now add in your cake mix and mix until combined. If you are adding in something else, now is the time! Spray your muffin tin and use an ice cream scooper to distribute mixture to each section. Pop in oven for 14 minutes and get ready for the delish smells cause this is going to tempt you the whole time it's baking! When done, take out and cool. If you are using the same tin like I did for each batch, allow it to cool COMPLETELY in between each baking. *pro tip; I only got 21 muffins out of my mix, if this happens to you, put a little water-about 1 & 1/2 tbsp of water in the empty tin before you pop it into the oven-this will make it so the empty space doesn't burn! (thanks to my Gram for teaching this to me years ago!)
