Recipe | Caramelized Grapefruit Champagne Cocktail

It's officially holiday cocktail season and I wanted to come up with something a little different that was fancy to wow your guest, but easy enough you could whip it up quick! Now full disclosure, this wholeeee post is my best friend Mikhaila's! She took over the creative process after our local market didn't have any fresh figs and then went to work in the kitchen while I played with her (well I refer to him as my or our) baby aka my best boy Bodhi aka bear aka handsome pants aka B. So giving credit where credit is due, she made this DELISH cocktail that you could total make in small batches like she did or a pitcher for the night. We'll call this Mixology with Miki!

Caramelized Grapefruit Champagne Cocktail

what you'll need
Brown sugar
Prosecco or Champagne 

recipe below will yield 2 cocktails
sprinkle half a tablespoon of brown sugar and half a teaspoon of cinnamon on one half of grapefruit

broil the grapefruit until caramelized on top

juice the other half of grapefruit 

Honey simple syrup; this makes more than you’ll need!
Mix equal parts honey and water on stove -used a 1/4 cup each until boils, remove from heat and let cool

Split juice between rocks glasses or flutes, 2 teaspoons per glass of honey simple syrup-more to taste, top with Prosecco, garnish with grapefruit slices and enjoy!
